Baked Fish, Brown Rice and Veggie Dinner
Of course the fish can be swapped with chicken or any other meat. Rice can be swapped with all veggies or a light salad.
On preparation: The french have a term called, ‘Mise En Place,’which means ‘putting in place.’ Anytime you prepare a meal it is smart to measure out everything, have items cut and placed into bowls before hand. So when you begin cooking you can concentrate on the cooking part without getting distracted or lost.
For the following recipe, you would first make sure fish is thawed well before hand if frozen. About 45 minutes before dinner you would turn on the over to the specified temperature, then measure out the ingredients. Then line a baking tray with foil and set all of this aside. Now you can begin with the actual cooking.
Easy Baked Halibut

Prep Time: 15 mins
Total Time: 30 mins Servings: 4-8
Ingredients
4 (3 -4 ounce) Halibut fillets, cut into 3 - 4 oz portions, around 1” thick
A jar of capers
1 tablespoon olive oil
1 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon garlic powder
1 lemon (optional)
Directions
Preheat oven to 400 degrees
Cut fillets into 3 - 4 oz portions. (Fist size)
Mix together salt, pepper and garlic powder in a small bowl and set aside
Drizzle halibut with olive oil
Coat halibut with dry ingredients
Place on a foil lined baking sheet
Pour some capers (1-2 teaspoons) on the halibut
Bake at 400 degrees for 12 - 15 minutes or until flaky when touched with a fork.
To Plate
For example make a bed of brown rice that was cooked with chicken stock or boullion.
Add some veggies or a few green on one side of plate.
Place fish on top of everything.
Squeeze some lemon if you like, add some fresh cracked,black pepper and add salt to taste.
You can also cut some fresh tomatoes, or slice some thin onions (if you can slice well and safely) along side of the fish, it’s up to you.
