5 dates, blended in food processor 3/4-1 can coconut milk Blend all together, add coffee, blend once more and voila! Coconut milk latte, it's even a little sweet! Amounts can be adjusted to taste!

Wow - that wounds really good! I will try that this weekend. Where do you buy cans of coconut milk? I can only find large containers at TJs.

I get the Trader Joes brand light coconut milk, not because it's light but because it is the only brand I have found that does not list Guar Gum as an ingredient. It is near the nut butter at TJs. You can always ask an associate, just ask for canned coconut milk, not coconut milk beverage!

That does sound good. I'll have to give a try. Anyone else have suggestions for cream substitutes? Proving to be my biggest challenge - I have a quick turnaround in the AM b/w the 6 AM class and getting to work. Need something I can whip up on the fly or a sub I can leave in fridge at work. Tried kefir this AM - it's ok but not my fav. Open to ideas!!!

I don't, just yet. But if you don't mind me saying so, try to use less and less of your soy cream that you're using I believe, each week.

almond or coconut milk? Not as creamy...full fat coconut milk in the can might do the creamy trick.
